Momma Pillay’s Stuffed Zucchini

Momma Pillay is always getting creative in the kitchen with fresh vegetables from the farm! Her stuffed zucchini is a favourite around the dinner table, simple, hearty, and oh-so-good. Serve it alongside your favourite protein with a side of rice or roasted potatoes for a delicious farm-fresh meal.

Ingredients

  • 1 medium-sized zucchini

  • ½ medium yellow onion, finely chopped

  • ½ red bell pepper, finely chopped

  • 1 stalk green onion, finely chopped

  • 1 medium tomato, finely chopped

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ¼ teaspoon salt

  • 1 cup shredded marble cheese, divided

  • 1 chili, finely chopped (optional)

Method

  1. Preheat the oven to 380°F (193°C).

  2. Prepare the zucchini:
    Cut the zucchini in half lengthwise to create 6 pieces. Scoop out the flesh from the centre of each zucchini half, leaving enough around the edges to create a sturdy shell. Roughly chop the scooped-out zucchini flesh.

  3. Make the filling:
    In a bowl, combine the zucchini flesh, yellow onion, red bell pepper, green onion, tomato, garlic powder, onion powder, salt, and ½ cup of shredded marble cheese. Add the chopped chili if you like a little heat.

  4. Stuff the zucchini:
    Evenly divide the filling among the zucchini shells, gently packing it in.

  5. First bake:
    Place the stuffed zucchini on a baking sheet or baking dish and bake for 20 minutes.

  6. Add the cheese:
    Remove the zucchini from the oven and sprinkle the remaining ½ cup of shredded marble cheese over the top.

  7. Finish baking:
    Return to the oven and bake for another 20–25 minutes, or until the zucchini is tender and the cheese is melted and golden.

  8. Serve & enjoy!
    Serve warm alongside your favourite protein, rice, or potatoes. Enjoy a little taste of the farm at the dinner table!
