Quick-Pickled Garlic

Made with fresh Russian garlic straight from our garden! This quick-pickled garlic recipe is simple, delicious, and a great way to preserve the fresh garlic harvest. The garlic develops a delicious tangy, slightly spicy flavour and makes the perfect addition to charcuterie boards, salads, sandwiches, or enjoyed straight from the jar!

Yields: 5 × 500 mL canning jars

Ingredients

  • 7 cups fresh garlic, peeled

  • 7 ½ tbsp pre-mixed pickling spice

  • 5 fresh chili peppers

  • 5 sprigs fresh dill

  • 6 cups vinegar

  • 6 tbsp salt

Method

1. In a large pot, combine the 6 cups of vinegar and 6 tbsp of salt. Bring the mixture to a boil over medium-high heat.

2. Once the brine is boiling, carefully add the peeled garlic cloves. Cook until the garlic becomes slightly translucent, but is still firm.

3. Into each 500 mL canning jar, add: 1 ½ tbsp pre-mix pickling spice, 1 fresh chili pepper, 1 sprig of fresh dill

4. Evenly divide the warm garlic among the five jars. Pour the hot vinegar brine over the garlic, leaving appropriate headspace at the top of each jar. Allow the jars to cool before securing the lids.

5. Once cooled, place the jars in the refrigerator. Allow the garlic to pickle and develop its flavour before enjoying.
