Blueberry Banana Bread
When my neighbours share a crate of fresh blueberries, it’s the perfect excuse for me to bake Blueberry Banana bread! Moist, flavourful, and just the right amount of sweet, making it a perfect snack for work or a treat after dinner. Trust me, you won’t be disappointed!

Ingredients
For the Bread:
· 2 cups all-purpose flour
· 1 teaspoon baking powder
· 1 teaspoon ground cinnamon
· ½ teaspoon baking soda
· ½ teaspoon salt
· ½ cup butter, room temperature
· 1 cup granulated sugar
· 2 large eggs
· 2 teaspoons vanilla extract
· 3 medium ripe bananas, mashed
· 1 cup blueberries, tossed in flour
For the Glaze:
· 1 cup powdered sugar
· 2–3 tablespoons milk (any kind)
Method
1. Preheat oven to 350°F (175°C). Grease or spray a 9×5-inch loaf pan with nonstick spray.
2. In a small bowl, whisk together flour, baking powder, cinnamon, baking soda, and salt.
3. In a large bowl, beat butter and sugar with an electric mixer until light and fluffy.
4. Add eggs and vanilla, mixing until combined.
5. Stir in mashed bananas
6. Gently fold in the dry ingredients, do not over mix.
7. Fold in the blueberries.
8. Pour the batter into the prepared loaf pan and bake for 1 hour, or until a tester inserted in the center comes out clean.
9. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
10. Make the glaze: In a small bowl, whisk together powdered sugar and 2 tablespoons milk, adding more milk 1 teaspoon at a time until desired consistency.
11. Drizzle glaze over the cooled loaf and enjoy!
